Apple Ciders are a big deal in France. And Cyril Zangs is one of the most famous makers of Apple Cider. They are located in Normandy amongst the largest apple orchards in France. Impressively, all of their ciders are hand crafted from sixty-nine varieties of estate-raised apples. And that means that the Ciders are fresh-pressed, naturally fermented and effervescent, hand turn in the bottle racks, and even have each bottle reopened to remove the sediment before being resealed… by hand. All in a loving, labor-intensive process. In addition to their famous Ciders, they have branched out into Eau de Vie and vinegars.

Cyril Zangs 00 Cider Eau de Vie is a first for Cyril Zangs. It is an un-aged Apple Eau de vie made by distilling their famous Cider into fresh, new-make Spirit. As a maker of natural Ciders, they have never used a still before. But fortunately, they are on the best of terms with their neighbors — Roger Groult Calvados just up the road — who are master distillers of all things apple. This Spirits is called “00” (Double Zero) because is bottled at 100 proof (50% ABV). And it can be very hard to get your hands on this limited release each year.
