Oat Whiskey done well is creamy, smooth, and a bit exotic, and this one is definitely done well.

Koval was the first small batch distillery in Chicago since the dark days of Prohibition. It was founded in 2008 by Robert and Sonat Birnecker who abandoned their academic careers to follow their hearts — and taste buds — into the Spirits business. The distillery supports sustainable agriculture and is certified organic and kosher. Over the years they have expanded their miracle-working to literally dozens of Gins, Whiskeys, Liqueurs, and specialty offerings, all of them professionally crafted and tasty-good.

Koval is famous for their brave experimentation. In addition to mixing and matching the traditional grain ingredients of corn, wheat, rye, and barley they have made Whiskey from millet, quinoa, and spelt. When something works, they keep it in the lineup. As you would expect, Koval Single Barrel Oat Whiskey is made from oats. But it is made from 100% oats, and that means that the grain gets a chance to take centerstage with creamy, exotic flavors you just won’t find in a "regular" Whiskey.

The palate is rich and creamy — almost like flan — with an interesting note of coconut milk, caramel, cashew, and malted milk balls.

Finish
The finish is bright, creamy and clean.
