“Would you like to start with a shot of Tequila?” Now that is a proper way to be greeted at a party. If you want to show some real cojones, leave salt and lemon in the kitchen this time and raise the temperature with our Mexican style shrimp bites.

Recipe ingredients are usually given for 4 portions, but hey, we’re talking party time here, so we’ve shaken and stirred the quantities for you and here’s what you’ll need for 8 bites:- 8 fresh shrimp tails
- half of a red bell pepper
- 1 jalapeño pepper
- 1 red chilli
- 2 small shallot onions
- 2 limes
- 1 mango
- 1 orange
- sea salt, black pepper
- cooking oil
… aaaand, of course, don't forget the TEQUILA! Reposado Tequila, which means 'rested', is a fine choice.
We turned to George Clooney’s Casamigos Reposado, as we’ve always trusted this man’s taste for the good things in life – yep, George has scored yet again! Trust your instincts with the selection, but if you do want a little hint, Dr. Adam Elmegirab’s Teapot bitters worked really great for us.
Let the bites take flight!
First of all, marinate the shrimps in Tequila and season with sea salt and pepper. Heat up a pan, add a splash of neutral tasting plant oil (sunflower, grape-seed or any other similar oil) and fry the shrimps for a few minutes until golden brown, then turn them and fry on the other side. Leave them to cool to room temperature and then refrigerate before serving.Now we're flying and it's time for...
Chop chop! Chopping time!Cut the bell pepper into tiny dice pieces and follow this up by peeling and cutting the mango and orange into equally small pieces. Chop the shallots, jalapeño pepper, chilli and lime zest into even tinier pieces, making sure to remove all the seeds from the jalapeño and chilli. Save some of the jalapeño rings for garnishing.
Immediately before serving, mix all of the ingredients together, squeeze a lime into the mixture, season with salt and add a few drops of cocktail bitter.
To serve, place the mixture into small glass bowls or glasses and top each one with a shrimp. Add a pinch of sea salt (preferably fleur de sel) to each shrimp and serve with a shot of tequila. Magnífico!!
