The house of Jean Fillioux is one of those old producers of Cognac that are living and breathing Cognac. They - along with all of their bottles - have this calm aura of quality about them that will make your heart skip a beat, knowing it is in the presence of something big. It all started with Honoré Fillioux, Jean’s father, who started his own house in 1880, making Brandy with grapes from his wife’s vineyard. In 1894, he bought the magnificent De La Pouyage estate on the top of the hill overlooking the world-famous vineyards at the heart of the Grande Champagne region. Four generations later, the owner Pascal J. Fillioux is touring the property on his chestnut mare, Poppy, making sure the grapes are maturing nicely and that the damp cellars are caressing the Spirits to perfection.

Jean Fillioux Grande Champagne Très Vieux XO Extra Cognac is a prestigious choice. The family is a bit secretive about the exact way they craft this mesmerizing Spirit, but we know it is made exclusively from the Ugni Blanc grapes harvested directly on the Fillioux estate in one of the highest acclaimed micro-terrain of the Grande Champagne region. The Cognac is distilled twice in Charentais pot stills before maturing in French oak casks (90% Limousin) for over 25 years. This is a beautiful Cognac, filled with elegance, poise, and exquisite flavors that can only develop in decades of attentive care.
