The yeast's role in the process of Whisky making is often underestimated. Even treated as an afterthought by mavericks who think "it's all about the wood." Well, true distilling masters understand each ingredient's importance to the final product.

The Yoichi Single Malt Aromatic Yeast is Nikka's tribute to the mighty yeast cell. Part of the 2021 Discovery series, created to highlight the key stages in the creation of its Yoichi and Miyagikyo Single Malts, this 2022 Yoichi focuses on the specific influence of low-temperature fermenting yeast in the flavor profile. The Whisky reveals a floral and fruity character, full of lilly, carnation, apple, pear, and yellow melon marked by the characteristic peat.

It's not uncommon for Japanese Whisky to be aged in mizunara (Japanese oak) casks. Suntory conducted a research on how mizunara oak influences Whisky flavor and found out it adds coconut notes to it.

Whisky or Whiskey? The spelling differs geographically. In Scotland, Japan, and some other parts of the world, distilleries usually spell it Whisky; in Ireland and the USA, they spell it Whiskey.
