Thurso is the northernmost town on the British mainland. The first Wolfburn distillery was born on the site in the early 1800s. But by 1872, production had ceased. In 2011, Single Malt industry veterans Shane Fraser and Lain Kerr revived the namesake far northern spirit. They broke ground in May of 2012 and had the first completed buildings by September, with production starting the following year. They haven’t looked back — developing a range of Single Malts and periodic small-batch special releases.

Wolfburn Christmas Special 2021 Edition is a festive Single Malt. It was aged for six years in a combo of first-fill Oloroso Sherry hogsheads and Bourbon barrels. Clocking in at 46% ABV, this lovely dram releases a flavorful harmony of raisins, dates, dark chocolate, vanilla, ginger, and Sherry tones on the full-bodied palate. It’s like having your mouth full of Christmas cake, but better?

Single Malt Scotch Whisky is made in Scotland using a pot still distillation process at a single distillery, with malted barley as the only grain ingredient. It must be matured in oak casks in Scotland for at least three years (most Single Malts are matured longer, though).
The new Wolfburn stands next to the Wolf Burn stream. But an original Wolfburn, located 350 miles away, was once a behemoth of the 1800's, cranking out 125,000 liters per year according to tax documents from the era.

Single malt stands for around 10% of the Scotch market. This is a malt containing only one grain, legally required to be barley in Scotland, and made at a single distillery.

A blended Scotch is a combination of different malts from different distilleries. It is typically made from grain Whisky but does include malt Whisky to give it a more complex body.
Beer and malt Whisky seem to have quite a bit in common. Both drinks begin with malted barley, which deliver the enzymes and sugars needed for fermentation when steeped in hot water. The two go their separate ways at the wash stage, where they're fermented or aged to become the adult beverages you know and love.
