This is a perfectly lovely Irish Single Malt finish grandly in PX Sherry casks and we cannot get enough.

Patrick Cooney knows Irish Spirits. He and his brother Nicholas purchased Gleeson — building the beverage-maker through organic growth and acquisitions to a nine-figure Irish giant. Patrick sold Gleeson in 2012 and has turned the family’s attention toward a new legacy — the Na Cuana beverage company and the Boann Distillery. It’s a true family business with his wife Marie, his daughters Sally-Anne and Celestine, and their sons Peter, Patrick, and James. Their brands include Adams Ciders, Boyne Brewhouse craft beer, Robert A. Murray Irish Cream Liqueurs, and The Whistler Irish Whiskeys.

This Whiskey is an Irish stunner. Everything from the bright amber-garnet hue to the blue and gold label on the bottle get your attention right away. But then you crack open the bottle of The Whistler P.X. I Love You Single Malt Irish Whiskey and find a lot more to love.

This is 100% pure Irish Single Malt aged in Bourbon barrels and then finished for a full nine months in Pedro Ximenez Sherry casks (PX). PX Sherry is the sweeter variety of the high-end Sherries and the casks caress a ton of delicate flavors out of the Spirit. And we want to personally thank Boann Distillery for bottling it at perfect 46% ABV. They call it “P.X. I Love You” as a play on words, but we love it right back.

Appearance / Color
Amber Garnet

Nose / Aroma / Smell
Even the fragrance is intoxicating with raisins, fig, and rancio right up front over a base note of toasted honey granola.

Flavor / Taste / Palate
The flavors are lovely and sophisticated with medjool Fig Newtons greeting you first, followed by vanilla flan, tea tannin, and a bit of English toffee.

Finish
The finish is nicely long, but not overbearing with a hint of cocoa.

Irish Coffee recipe: 1 cup freshly brewed strong coffee, 1 tablespoon brown sugar, 3-4 tablespoons Irish Whiskey, heavy cream - slightly whipped.
The Boann Distillery is the first distillery to open in the area in 50 years. Also incorporating the Boyne Brewhouse craft brewery, their visitor center will have its own bar and restaurant. They will also be crafting a very special Gin, incorporating local hedgerow botanicals, from their small specially commissioned Bennett Gin still.
Boann is extremely environmentally conscious. Operating on a closed loop system for water, they recycle all of their input water. The heat generated in the production process helps run their packaging lines and will heat their restaurant, visitor center and offices. Even the grain bi-products of their distillation are used as animal feed.
