Flaviar, Westward and Suzor Wines have partnered to create a custom Single Malt blend finished in Pinot Noir Wine casks for a light, fruity, and herbaceous experience. 

Westward Whiskey Distillery was founded by Christian Krogstad, who graduated from the Siebel Institute of Technology — America’s oldest brewing academy. He worked at craft breweries and a vineyard before founding what would become Westward in 2004 to bring his vision for an American Single Malt to life. The Westward team was expanded in 2011 when Thomas Mooney joined as co-founder and CEO, accelerating growth and bringing that vision to a wider audience. Today, this Oregon distillery produces signature Spirit brands including Krogstad Aquavit, Volstead Vodka, Casa Magdalena Rum, and Westward Whiskey. 

Westward has a Pinot cask-finished Spirit in their core lineup, but were there when this one was being made and it has a lighter, more herbaceous flavor profile. Westward partnered with us and their favorite Oregon Wine-makers — Greg McCLellan and Melissa Rondeau of Suzor Wines — to make just 745 bottles of this special Westward American Single Malt Pinot Noir Cask Finish edition.

It starts with Westward's Single Malt made from 100% local two-row barley fermented using American Ale yeast. It’s double pot distilled and barreled in #3 char new American oak casks. Then it was aged for four years and three months before being moved to two French oak casks used to mellow Suzor’s famous Pinot Noir, where it sat for two more years. Finally, the nectar was bottled at a lovely 45% ABV.

Flavor / Taste / Palate
The flavor profile shines with notes of apricot and pears over notes of leather, fresh cut hay, and custard.

An un-aged American Whisky is often called “white dog.”Sour Mash is the fermentation process by which a percentage of a previous fermentation is added to a new batch as a "starter" to get the fermentation going and maintain a level of consistency from batch to batch. A sweet mash means that only fresh yeast is added to a new batch to start fermentation.
