Mark Reynier is one of the few living legends of both Whisky and Whiskey. He’s worked in Wine & Spirits since 1980. In 1996 he was a co-founder of independent bottler Murray David. In 2000 they purchased the dormant Bruichladdich Distillery and as CEO Mark returned it to unquestioned greatness. In 2012 the founders and investors voted to sell both operations to Rémy Cointreau Group — Mark was the lone dissenting vote. And while he might have taken his share of the millions and retired in comfort, he immediately turned around and purchased a facility from Diageo in Waterford, Ireland, and began distilling in 2015. This is his new passion — The Waterford Distillery. Here he and his team produce a range of fine Irish Whiskies.

County Laois is a stretch of fertile farmland in central Ireland. John Tynan has a farm there where he raises barley. Waterford Single Farm Origin Dunmore Edition 1.1 is made exclusively from the barley from this one farm. The Single Malt distilled from this grain is aged in a combination of 33% first-fill American oak, 18% virgin American oak, 25% French oak, and 24% Vin Doux Naturel Wine casks. The Spirit is bottled at 50% ABV with no chill filtration or artificial nonsense.

Appearance / Color
Light Amber

Nose / Aroma / Smell
The aroma starts with a note of Terry’s chocolate oranges followed by roasted grain, sultanas, citrus zest, baked cinnamon, and creamy oatmeal.

Flavor / Taste / Palate
The palate opens strong with baking spices and lemon curd followed by crisp apple, marzipan, anise, Aleppo flakes, and dark chocolate.

Finish
The finish is long and fragrant with a note of cloved oranges.
