Distillery
Founded in 2013
The Summerhall Distillery launched in Edinburgh in 2013, making it the first new Gin Distillery in the city for more than 150 years. Today, it is home to Pickering’s Gin.

The Distillery was founded by friends Marcus Pickering and Matthew Gammell, whose interest in Gin stemmed from making their own Sloe Gin, and from working in the industry. Situated in the Summerhall Art Club, the distillery has been built on the site of an old veterinary school, next to a bar called The Royal Dick.

The Gin is pumped directly from the Distillery to the bar next door, meaning visitors have access to Gin on tap! Summerhall has two copper pot stills which have specially made ‘water jackets’, meaning they can be heated more slowly and gently than a traditional still.

Everything is done on site by hand using traditional equipment – thermometers for temperature gauging, a home-made label machine to help apply labels by hand, and a vat of hot wax for hand-sealing the bottles.
