An exploration in taste, Swedish style.

Founded in 2008, the Spirit of Hven Distillery became the third pot still distillery in Sweden and the smallest in the World. It is based on the Island of Hven, with a population of only 300-400. The distillery boasts of its green, organic approach to distilling, taking up to two years to produce its Gin and Vodka. A testament to its quality is the fact that Hven Gin is the only Gin served at Noma, a Copenhagen restaurant that boasts the title of best restaurant in the World.

Merak is the second product in the limited edition line of Seven Stars, with four more still to be released. Named after a star in the Ursa Major Constellation (AKA The Big Dipper), Merak is an exploration in taste. This organic Whisky has been aged in a mix of American, Spanish and French oak barrels and is a blend of only 25 casks. To maintain the naturalness of the spirit, it has not been chill filtered. Bottled by hand, no less.

Hven is fairly transparent about the details of their Whiskies (malt amount and cask maturation) on their website.
In the U.S., Irish Whiskey sales have jumped by over 500% since 2002. It’s the fastest growing category in the Spirits industry. There’s some news to raise your glass to.
Is it spelled Whisky or Whiskey? Maybe you've noticed it before, but let’s just take a wee moment to help you keep your Es in order with this simple rule: There is an E in the word Ireland, so there is also an E in their Whiskey. The rule also holds true for United States, so while there is no E in Scotland, Japan and Canada the same goes for their Whisky. All clear? Good.
The two biggest Whisky producers in Japan and major rivals are Nikka and Suntory.
