Siete Leguas: Nomen est Omen

Siete Leguas distillery was named after a horse that belonged to Pancho Villa, the famous Mexican revolutionary. His Siete Leguas was known for his endurance and speed, being able to travel seven leagues in a day. Don Ignacio Gonzales Vargas, who founded the distillery back in 1952 in the town of Atotonilco, Jalisco, chose a fitting name for a distillery that will later on travel (at least) 7 leagues of its own with its Agave beverages.

Siete Leguas comprises of two distilleries, the original Fabrica en Centario and a newer Fabrica La Vencedora that was opened in 1984 to expand on operations. Both still work in a very traditional way, with literal mules pulling the stone twice a day in the museum-like original Fabrica. Yikes! (Don’t worry though, they get a good rest between the two pullings between 11AM and 3PM, and also before and after that.)

Siete Decades Blanco Tequila is a limited edition series celebrating the first 7 decades of the distillery. There were only 70,000 bottles of this Tequila made. The distillery went all in celebrating their anniversary: this Tequila is made using only Agave Criollo, a wild-grown Agave. A plant grown in the wild depends solely on the rainwater and therefore ripens slowlier, producing smaller but much richer piña. This Agave is then Tahona crushed (crushed with a large stone wheel) in a traditional way in Fabrica en Centario. Speaking Agave, it doesn’t get much better than this.
