If the Germans know one thing, it's Beer. What's lesser known is that they've been distilling their lager for ages, calling it "Bierschnapps". Making booze from brewskis makes sense, since they both start with fermenting grain before their paths diverge. Now ― in the wake of the craft Beer revolution ― this practice is taking America by storm. The guys at Seven Stills are doing just that ― turning craft Beer into craft Whiskey. If you ask us, that's almost as awesome as turning water into Wine. The founder Tim Obert has been at it since 2016, collaborating with craft-brewing heavy-hitters from his base of operations in Bayview, San Francisco, expanding considerably along the way.

Hazy, juicy Beer has been all the rage. In case you're unfamiliar with the style, it's the one that employs oats for the haze, and truckloads of bright and fruity hops for its aroma. It's with one such Beer ― the stronger DIPA or double IPA, to be exact ― that the Slippery Eight Loop Whiskey starts. It isn't Seven Stills' first rodeo involving this style, but it is the first one involving Loop Juice for an extra juicy brewski. They then distilled the finished Beer using a 300-gallon pot still to create the epic 94-proof Whiskey. Unique? You bet. We're digging the bright, rich, and complex Spirit. The only downside is they only made 540 bottles of it!

Bourbon rules refer to manufacturing methods rather than location. Bourbon must be matured in new and charred American white oak casks for at least 2 years. If the bottle has no age statement, the Bourbon is at least 4 years old. No coloring or flavoring of any type is allowed, and the mash bill must contain at least 51% corn.

Appearance / Color

Nose / Aroma / Smell
The fruity DIPA translates into a bright, citrusy, floral, and sweet nose with rich baked apple, pear, and cinnamon aromas.

Flavor / Taste / Palate
It's a complex palate, for sure. Canned fruit is in there with pears and peaches standing out. Then there's apple pie and a tropical touch with some banana that's been left on the counter for one day too many.

Finishes with caramelized sugar, fruit salad, oak, and a touch of vanilla.
