Both Whiskey and Beer start with fermenting grain before their paths diverge. It makes sense, then, to distill Whiskey from actual Beer. Hey, it might be a pretty new thing in America, but the Germans have been distilling their lager for ages. Tim Obert is doing just that at Seven Stills ― turning craft Beer into craft Whiskey. If you ask us, that's almost as awesome as turning water into Wine and the best way to ride the wave of craft Beer popularity. He has been at it since 2016, collaborating with craft-brewing heavy-hitters from his base of operations in Bayview, San Francisco.

It all starts with the Beer that Seven Stills brews in-house or in collaboration with an established brewery. The Rorschach Test had them working with Moksa Brewing Co. from Rocklin, California. It's not your average Beer that they came up with, though. The Imperial Pastry Stout was finished with Andytown coffee, cacao nibs, coconut shavings, and vanilla beans. Overkill? There's no such thing. They then distilled the finished Beer and aged it in new American oak. Then they added more of the same treats that went into the Stout in the first place. The result? 540 bottles of a Spirit that's basically a 3-in-1 affair that combines dessert, a cup of joe, and a delicious Whiskey all in one awesome package ― ehm ― bottle.

It's viscous with a complex and deep palate with intense chocolate and coffee notes, caramel, vanilla, and oak.

The finish is smooth and rich with lingering coconut and dark coffee notes.
