Zee Germans have been making hard stuff from lager for ages and call it “Bierschnaps”, and America is now in the middle of a frenzy making booze from brews. Whiskey and Beer have the same inception: fermenting grain, but their paths then diverge. What these mad scientists are doing now is using finished beer when making Whiskey, and the result is as exciting as it sounds.

Tim Obert and Clint Potter from San Francisco are among those crafty fellas and they produce top-notch Beer-based Whiskey called Seven Stills. One of their creations is Frambooze Whiskey, whose base is Framboise from San Luis Libertine Brewery. They mature it in new American oak casks and finish it in Framboise barrels with raspberry. The concoction is a delightful and fruity Whiskey worth your attention. Beware, however, this bad boy is ridiculously limited – only 330 bottles are available!

Bourbon rules refer to manufacturing methods rather than location. Bourbon must be matured in new and charred American white oak casks for at least 2 years. If the bottle has no age statement, the Bourbon is at least 4 years old. No coloring or flavoring of any type is allowed, and the mash bill must contain at least 51% corn.
Throughout history, more than seventy major cities have called themselves “City of the Seven Hills.” San Francisco is one of them. The name “7 Stills of San Francisco” is a pun based on the nickname.
Corn Whiskey is a commercial product that must contain at least 80% corn, be distilled at less than 80% ABV (160 proof), and, if wood-aged, may be aged in either used or new un-charred barrels.
Tennessee Whiskey closely parallels Bourbon, but final filtering through sugar-maple charcoal (called the Lincoln County Process) is what some producers say differentiates them. Tennessee Whiskey’s finish is sweeter and smoother than Bourbon.
An un-aged American Whisky is often called “white dog.”Sour Mash is the fermentation process by which a percentage of a previous fermentation is added to a new batch as a "starter" to get the fermentation going and maintain a level of consistency from batch to batch. A sweet mash means that only fresh yeast is added to a new batch to start fermentation.
Moonshine Whiskey is distilled from a varied mix of corn and sugar and is aged in Mason jars and jugs for the length of time it takes the customers to get home.
