After working for Wine giant Robert Mondavi, Dave Phinney founded Orin Swift Wines and created a blended California Red called The Prisoner. It was hugely successful, and after years of explosive growth he sold the business to Gallo for a reported $300 million. He is still in charge of Wine-making for Orin Swift, but used the proceeds to purchase vineyards in France, Italy, Greece, and Spain while launching a new venture — Savage & Cooke Distillery — in 2018. The distillery is located on the northeast of San Francisco on Mare Island where he distills, blends, and crafts Whiskies and bottled cocktails. And naturally, he acquired a local grain farm AND a private spring in Sonoma County… because he can.

Savage & Cooke Lip Service Rye Whiskey is the first release of Dave’s highly anticipated Rye Whiskey. He personally selects each sourced barrel from an undisclosed distiller in Tennessee. The mash bill consists of 51% rye, 45% corn, and 4% malted barley. Primary aging is a minimum of three years in new oak. But once the barrels arrive at Savage & Cooke they are married and finished in Dave’s own Red Wine casks from his French vineyard and delivered at 45% ABV. But that’s not enough specialness… Dave puts his unique spin on every element, which is why the bottle is a rare, black opaque glass adorned with avant-garde art photography.

Warm Amber

Nose / Aroma / Smell
The aroma has classic Rye spice, but it’s layered over pronounced woody notes with a bit of anise and hard caramel.

Flavor / Taste / Palate
The palate is well-balanced and sips older than its years with notes of buttery cinnamon roll, berry compote, and Aleppo flakes.

Finish
The finish is bright and fruity with a lingering heat.

I'm a big fan of Dave Phinney as a winemaker, so I was interested in trying this new Rye offering. The first few tastes were very harsh and initially turned me off, but it seemed to open up after it had some air. Overall, a decent debut with some room to grow.

Amazing flavor. But it evaporates quickly, I poured a glass to sit a sip but had to keep refilling it before I was able to finish the glass..

I don't feel like it was very close to its flavors spiral. I wasn't very happy with it. Lots of burn, peppery and mildly oily.

This was a remarkably smooth Rye. No harsh burn at the end. The wine rest gives it some lovely fruit notes.

I was actually quite impressed with this. Very smooth and balanced. It was the label that actually had me curious - I like the oddities. However, the bottle itself was even impressive - a class stopper, beautiful bottle, and the rye came out nicely. Drank it neat over a few days and enjoyed every drop - I'd buy it again.

This was one of my first rye whiskeys. Not as harsh as I expected. Good, but not great.

First, I will admit the bottle turned me off a bit...the label just was not appealing. Now to the Rye. I first had a taste neate...it needed to sit a bit...a little air helped. I then added a small ice cube, it opened up dramatically - fruity, with a touch of something I still can not put my taste buds on. I may need another glass. I think a "peppery" cigar would go well with a glass. I am not sure I would buy this again considering all the options out there. But, at the price point it is a good value.

Very pleasant to the nose, small bite on the sip before the fruity elements wash over. Agree with another comment that called this one fun. I like it in a perfect Manhattan, as well as a straight sipper. Will be buying again.

Technically a rye, but don't come at this expecting the standard dose of rye spice. Much more dark fruit and sweetness with a gentle reminder of rye spice. Solid nose holding a bit more of the rye characteristics with a fair amount of wood coming through. Counter to the description provided, despite its complexity I think it tastes a bit young. Overall, quite enjoyable, and I don't use the word often with spirits, but this one was "fun."

Excellent. Rich fruit notes and some sweetness mixed with very bright rye spice. Nose is very pleasant.
