Sakurafresh Beverage and Food is a company based in Yokohama, Japan. They have focused on earth-friendly gourmet spices, honeys, pickles spreads, and such. But this year they have launched a line of zero alcohol beverages and bitters for making flavorful cocktails without the ethanol. The company was founded in 2016 by the co-founders of sustainable farm producer First Agro in India — Naveen MV and Nameet M.
Sakurafresh Amaretto Liqueur is a zero alcohol version of the classic Amaretto flavor profile. There are several techniques for making “low and no” alcohol beverages and Sakurafresh is quiet on which method they use. But we can comment on the results. Sakurafresh Amaretto Liqueur has a sweet, marzipan and roasted almond profile. It is nice as a sipper when chilled or can be swapped in to a Sidecar, Amaretto Sour, Amaretto Coffee, or any number of cocktails… or should we say “cocktails?”

The palate opens with a well-textured mouthfeel and notes of marzipan, honey, and Demerara.

What’s the difference between maceration and vapor infusion?
With maceration, the more delicate botanicals are soaked and cooked in a still. With vapor infusion, the botanicals are placed above the base spirit whilst it’s heated and the vapor passes through the botanicals, becoming infused with the essential oils.
