The elevation, Arid volcanic soil and humid sea air create a sugar cane with a lower sugar content, giving J.M Rhums a very distinct character. Farmers in Martinique don’t burn the cane fields after the harvest, they simply proceed to grow bananas or pineapples on it and rotate the cultures with every new crop.
Rum used to be accepted as a form of currency in Europe and Australia, a practice we should probably bring back into fashion.
