A high-rye Bourbon that kicks into high gear just begging for you to pour a Manhattan.
The Honeoye Falls Distillery sounds like it sits in the mountains of Cairngorm National Forest in the Highlands, doesn’t it? But actually, this craft distillery sits across the street from a tractor supply store in upstate New York about seven miles south of Rochester. It was founded by Teal Schlegel and Scott Stanton in 2014 — Teal is the chemist, Scott the business guy. They opened their doors creating Gin and immediately started aging Whiskey. They inaugurated a tasting room and lounge just two years later. Today they serve up a line of nine hand crafted Spirits from Gin and Whiskey to Absinth and Vodka.
Red Saw Bourbon Whiskey is named after the original business in their small town of Honeoye Falls. Seems that those falling waters power a sawmill back in the day. All of the grain in this Spirit is locally sourced from farms in Monroe County, and those grains include 51% corn, 34% rye, and 15% malted barley. And that barley is floor malted like they used to do back in Scotland before everything got all corporate-like. It’s produced in very small batches — so you may notice subtle differences from batch to batch. And it’s bottled at a tidy 48% ABV, so you will not have any difficulty tasting it. It’s just begging to be shaken into your next Manhattan.
