As a boy, Ciaran Mulgrew would sometimes go to work with his dad at the local pub where he was a barman. As he tells it, while tending bar he would hear stories told by patrons. But he kept those stories quiet as a confessional. He was the Quiet Man. Ciaran has since spent his career in the drinks business and named his Irish Whiskey after his father in this way. The Quiet Man Whiskies are made by his Niche Drinks company which is a subsidiary of Luxco, which as of 2021 is owned by MGP. But Niche Drinks is left alone in Ireland to keep on doing exactly what they have been doing from the start — making great Irish Whiskies and Cream Liqueurs.

Once you have perfected fine Irish Single Malt, what do you do next? If you are the fine folks at The Quiet Man you start experimenting with finishing tweaks. The Quiet Man 12 Year Old Bordeaux Wine Cask Finish starts with their foundational 100% Irish Single Malt loveliness that has been aged for twelve years in ex-Bourbon casks. The Spirit is then moved to Bordeaux Wine casks to finish — bringing out notes of wild berries — before being bottled at 46% ABV.

Amber Gold

Nose / Aroma / Smell
All the aroma notes of warm chocolate baked goods are still there, but now there are additional aromas of strawberry and a hint of hazelnut.

Flavor / Taste / Palate
The flavor profile confirms the nose with toasted Granola clusters augmented by notes of mixed red berry truffles and a touch of dry tannin on the palate.

Finish
The finish is medium length, lightly sweet, and just a bit dry.
