The \u003cem\u003e\u003cstrong\u003eMorales family\u003c\/strong\u003e\u003c\/em\u003e works together day in, day out, to create the Spirit following \u003cem\u003e\u003cstrong\u003etraditional Zapotec recipes\u003c\/strong\u003e\u003c\/em\u003e and methods. \u003cem\u003e\u003cstrong\u003eJose\u003c\/strong\u003e\u003c\/em\u003e, his father and his brothers cut the Agave plants, while his mother \u003cem\u003e\u003cstrong\u003eblesses them\u003c\/strong\u003e\u003c\/em\u003e with sage before cooking them in the earth. His wife plants new Agaves and a gaggle of uncles keeps an eye on the distillation process. The Madre recipe was designed by mixing an ensemble of agave to give a softer, lighter smoke and a sweet botanical hue.\u003cbr\u003e\r\n\u003cbr\u003e\r\n\u003cem\u003e\u003cstrong\u003eMadre Mezcal\u003c\/strong\u003e\u003c\/em\u003e, an artisanal Spirit \u003cem\u003e\u003cstrong\u003ehandmade\u003c\/strong\u003e\u003c\/em\u003e in the valley of Oaxaca, is made with Agave Espadin and Agave Cuishe. \u003cem\u003e\u003cstrong\u003eJose Garcia Morales\u003c\/strong\u003e\u003c\/em\u003e and his folks roast them in an earthen pit and use \u003cem\u003e\u003cstrong\u003ewild yeast \u003c\/strong\u003e\u003c\/em\u003efor fermentation. Family’s ancient copper still produces a \u003cem\u003e\u003cstrong\u003eunique Spirit \u003c\/strong\u003e\u003c\/em\u003ewith lovely Agave flavors and aromas, accompanied by warm and peppery notes.
