Penelope’s signature, award-winning Bourbon blend is finished in French Rosé casks for a refreshing, bright limited edition release.

Mike Paladini and his wife Kerry had long agreed that if they had a daughter she would be named Penelope. In 2018 they had that daughter, named her as intended, and founded Penelope Bourbon at the same time with Mike’s childhood friend Danny Polise. As many start-up Spirits companies do, they have launched with a little outside help. In this case distilling and aging in Indiana at MGP and expert blending and bottling assistance from Castle Rock in Kentucky — whom they proudly call part of their team. And the team is working, with two successful releases under their belt and a fistful of awards already in hand.

Penelope Bourbon Rosé Cask Finish starts with their award-winning Bourbon. So that’s where this story begins. Penelope Bourbon is a blend of three Bourbon Spirits — two with rye in the mash and one with wheat-based. Two of them are aged two years, one is aged three in barrels that have a #4 char on the staves and the heads have a #2 char.

Penelope Bourbon Rosé Cask Finish is this most signature of Spirits finished in French Rosé Wine barrels to develop a bright profile with a hint of tannin and sweetness. And this is a real limited edition treat — they only made 2400 bottles in total without chill-filtering at a very nice 47% ABV.

Appearance / Color
Medium Amber

Nose / Aroma / Smell
The aroma has a note of bright Italian blood oranges, caramel, vanilla, and a hint of oak.

Flavor / Taste / Palate
The flavor profile is light and refreshing with notes of caramel sauce, strawberries, butterscotch, citrus zest, and dry oak.

Finish
A bit of spice wells up at the finish with a balances sweetness.

Bourbon only needs to be placed in a new oak container for a few seconds to be called Bourbon. Fresh from the still and unaged Bourbon is called a White Dog. Recently, many of the larger distillers have started packaging this harsh, clear grain spirit for sale.

J.B.'s father, Joseph W. Dant, invented a still made from a poplar log at 16, as he couldn't afford a copper still. Although crude, it worked exceptionally well!

Bourbon matures quicker than Scotch due to higher temperatures in American warehouses.
Bourbons have very prominent notes of vanilla, as American White Oak is naturally high in vanillins.

Yellowstone Bourbon has had several owners throughout its history, including J.B. Dant, D.H. Taylor, The Glenmore Distillery, United Distillers & Vintners, the David Sherman Company, Heaven Hill, and David Sherman (now known as Luxco).

Bourbon was declared "The Official Spirit of America" by an Act of Congress signed by President Lyndon Johnson in 1964.
