OOLA DistilleryOOLA Distillery

Founded in 2010
OOLA Distillery was founded by Kirby Kallas-Lewis in Seattle's Capitol Hill Neighborhood. Grains for their spirits are sourced from one organic farm in Eastern Washington. Once the freshly milled grain arrives at the distillery, Kirby and team mash, ferment, and distill using copper pot and column stills.

Their lineup includes: Vodka, Citrus Vodka, Rosemary Vodka, Chili Pepper Vodka, Gin, Waitsburg Barrel-Finished Gin, Waitsburg Bourbon Whiskey (and a rare release of the Cask Strength version of the Waitsburg Bourbon), Smoked Whiskey, Three Shores Whiskey, Three Shores Black Label Whiskey, and Discourse C.
Due to the current situation with COVID-19, all Distillery Tours are on-hold. We'll notify you the moment we're able to organize them safely again.

About The Flavor Spiral

What does OOLA Distillery taste like?

The Flavor Spiral™ shows the most common flavours that you'll taste in OOLA Distillery Spirit. It's based on all OOLA Distillery drinks in our large database and gives you a chance to taste OOLA Distillery before actually tasting it.

We invented Flavor Spiral™ here at Flaviar to get all your senses involved in tasting drinks and, frankly, because we think that classic tasting notes are boring.

Welcome back to Evening from OOLA Distillery. Now finally I think we can try the cocktails that have been sitting in front of us. I have a Smoky Black Manhattan with a little orange zest and I will tell you something. Strong, yes, but good. What do you have there?

It's called Corpse Reviver Nr 2. Apparently it's a medical miracle. It's a Gin drink and there's a little bit of lemon juice in there I also detect some Absinthe. Or if somebody might have told you there was Absinthe in it.

You know OOLA was named after the owners’ German Shepherd. It was one of the first distilleries to open in Seattle post-prohibition. They're award-winning urban distillery. They use sustainable practices in the production of all their spirits.

I absolutely believe that because I have seen that they do all of their fermenting, distilling and bottling on-site, right here. And speaking of bottling we got to help out. What are you doing? I'm trying to put the labels on. The machine puts a label on the bottle. Very nice. Bottled perfectly every time.
