The Nonino Distillery was established in 1897 by patriarch Orazio Nonino in the Friuli region of Italy. They’re responsible for some of the biggest revolutions in the Grappa industry - in the early 1970s Giannola Nonino began making Grappa from a single grape variety. In 1984 they also gained government approval to use the whole grape clusters, branded as ÙE (pronounced “Oo-ay”). Today their five artisanal distilleries are run by Benito and Giannola Nonino with their three daughters.
 
Il Merlot di Nonino Grappa is one varietal, meaning it’s obtained from 100% Merlot grapes. It’s distilled slowly to allow the evaporation and condensation of the volatile components responsible for the olfactory characteristics of the Grappa. It then rests for 6 months before being bottled.

Appearance / Colour
Chrystal clear, pure.
 
Smell / Nose / Aroma
Of fresh cut hay, alfalfa (lucerne) and clover. Scents of rose petals and cherry stones.
 
Flavour / Taste / Palate
Dry and grapy entry. Vinous, warm with complex herbaceous flavours and full bodied. At mid-palate, the flavour turns sweet and ripe.
 
Finish
Long finish, grapy and concentrated.
 
Comment
This one is more elegant than powerful.  Allow it to rest in the glass for a few minutes to expose it to oxygen, best enjoyed after a delicious meal.

Italian law requires winemakers to sell their pomace to grappa makers as a measure to battle moonshine operations. They say it works. Sfortunatamente!
Italians add Grappa to espresso coffee to create a caffè corretto, meaning "corrected coffee". Incredibile.
Grappa can help digestion, so it's perfect after meals.
