High Wire Distilling Company is Charleston’s first operating distillery since Prohibition. It was founded by serial entrepreneur and Culinary Institute of America trained baker Scott Blackwell and his wife Ann Marshall. They had worked side-by-side running a specialty bakery which they sold to General Mills in 2012. The next step for them was a venture into Spirits, when the husband-wife duo opened High Wire in 2013. And not only has the venture been successful with a slew of product releases based on a culinary approach, but in 2019 they were nominated for a James Beard Award — considered the top honor in the food industry — in the category of Outstanding Wine, Beer, or Spirits Professional category.

They like to use rare, local and heirloom ingredients in everything they produce at High Wire Distilling. So when they set out to produce a Rye Whiskey, they dug deep into the traditions and heritage of local farms. Abruzzi rye is originally from Italy. But it was an early seed import to the South and was a primary grain source for centuries before hybridization and optimization boosted the yield of lesser grains. New Southern Revival Rye Whiskey is 75% Abruzzi rye and 25% heirloom corn and bottled at 45% ABV. This gives it a unique palate that is warm with the spice you are looking for without blowing the doors off… which we think is a very good thing.

Appearance / Color
Ruddy Bronze

Nose / Aroma / Smell
The aroma is sweet and soothing with notes of warm nuts — almonds and hazelnuts — and notes of autumn, including pumpkin spice and caramel apples.

Flavor / Taste / Palate
The flavor profile has less bite and more warming spice with another dose of roasting nuts and s’mores.

Finish
The finish is medium length, warm, and a little sweet.

Rye - think of it as Bourbon's edgier cousin. It’s known for what many call a spicy or fruity flavor. Rye (distilled from at least 51% Rye) is not on the sweet side and tends to have a spicier body. That’s why the character of a cocktail made from Rye, instead of Bourbon, is drier.
