A rare, limited edition brandy aged in exceptional Amontillado a single cask.

PM Spirits markets itself as a “Provider of Geeky Spirits.” Founder Nicolas Palazzi was raised amongst his family’s vineyards if Bordeaux, France, and learned the ins and outs of artisanal Cognac under the tutelage of a man known only as Mr. X. After his successful start in Cognac, Nicolas has turned his attention to the “geeky” production of a wide range of strictly limited Rums, Brandies, Whiskies, Armagnacs, Calvados, Liqueurs, Eau de Vie, and a bunch of specialty bitters and Vermouths.

Navazos-Palazzi Spanish Amontillado Cask Brandy is a distilled 100% Eau de Vie of the Spanish Pardina grape — of the most popular varietals of southern Spain for the production of Brandies. It is distilled in a copper pot and aged for seven years in a first-fill ex-Amontillado cask. And the resulting flavorful Brandy is then bottled at natural cask strength with no additives, filtrations, or colorings. This limited release is served at 42.5% ABV and is a single cask offering with each bottle hand-numbered. It is a rare and exotic treat indeed.

Smartass corner:
Amontillado is a kind of Sherry — a fortified Wine — developed in Spain since 1700s. It is darker and richer than a Sherry Fino, but a bit lighter than Oloroso. Famously, it served as the inspiration for the short story by Edgar Allan Poe, “The Cask of Amontillado.

Nevertheless, the best Brandies are required to preserve the concentrated flavor of the used fruit.
Brandies can help digestion, so they are perfect after meals. They were and are still considered medicine. Basically, any fruit that can be fermented can be distilled and turned into Brandy.
Brandy was invented in the 16th century by a sneaky Dutch merchant who learned how to remove water from Wine and save cargo space. He then added water again and called it “Bradwijn”, which means “burned wine”.
