Named after the first Barbadian baronet Sir John Gay Alleyne, Mount Gay Distillery is the world's oldest commercial Rum-making establishment. It was set up back in 1703, when most of us weren't even alive yet, and being around for so long gives the distillers quite an advantage: they know what works. Their Rum is made from molasses, while they filter the water through natural coral. Then, they ferment it with an exclusively selected yeast; distill it in both copper pot stills and column stills; and mature it in oak barrels. It's an ancient recipe and a carefully tuned process. And being the go-to Rum among sailors for centuries is the best testimonial a Rum can get.
Mount Gay 1703 Old Cask Selection is a ridiculously premium blend of minimum 10YO to 30 year old Rums, fermented in oak vats (again, using water filtered through the goddamn corals) and distilled twice in both copper pot stills and Coffey column still. The Spirit was matured in ex-Bourbon oak casks and the result is a complex and lush Rum with a hefty Bourbon inheritance. It's bottled decadence in the best possible way - a sure hit in your home bar.
