Israel is a country of winemakers and craft beer, but in recent years a crew of pros and home distillers established the Milk & Honey Distillery. The first drops were distilled in 2015 and several young’uns were bottled for us to experience. M&K are taking this noble endeavor seriously: their pot still was custom-made according to the rules of Scotland, and they hired one of the best Master Distillers, "The Einstein of Whisky" — the late and great Dr. James Swan. A team of eleven works day and night to create the finest Tel Aviv spirits.
Why The Last One, you ask? Well, it was the one to come at the tail end of their Young Single Malt series, meaning it was a final preview before the main event — the launch of their regular Single Malt. Don't be fooled though, as this one is nothing to scoff at. It has spent a year in both former Bourbon and STR (shaving, toasting & re-charring, pioneered by Dr. Swan) red wine casks. What a journey!
Appearance / Color
Pale gold
Nose / Aroma / Smell
It's delicate and sweet with pears, apple peel, and citrus, as well as vanilla and dark chocolate.
Flavor / Taste / Palate
The sweetness is there with notes of honey, vanilla, and dried fruit. Then there's a pleasant woodiness and prominent spice and licorice.
Finish
It finishes long, woody, and fruity with just the right amount of lingering pepper and cinnamon to round it all off.
