That’s because they stubbornly adhere to their time-tested methods and practices for making the world’s most popular Irish Whiskies. Irish Distillers makes the famous Jameson, Powers, Paddy, Redbreast, Green Spot, and Midleton Very Rare Whiskies along with Huzzar Vodka and Cork Dry Gin.

Midleton created the Very Rare Dair Ghaelach series to celebrate the natural woods growing in the hills, forests, and moors of the Emerald Isle. The Knockrath Estate sits south of Dublin near the east coast and has been managed by the Brabazon Family for four hundred years.

Midleton Very Rare Dair Ghaelach Knockrath Forest is classic Single Pot Still Spirit aged first in ex-Bourbon casks and finished in virgin Irish Oak hogshead casks from the estate. The wood is sustainably harvested and rare, so this match yielded just forty-two casks. All of this attention to detail yields a deep and rich dram with the flavor of the island itself ranging from 56.1% - 56.6% ABV.

Appearance / Color
Warm Mahogany

Nose / Aroma / Smell
The aroma is rich with notes of warm toasted woods, espresso, baked apples, and vanilla.

Flavor / Taste / Palate
The mouth-feel is coating and thick with notes of wood spices, dark chocolate, wild honeycomb, and toffee.

Finish
The finish is nicely long with a lingering note of baking spices.
