We are accustomed to hearing about small-batch distillers in the South … but not like this. Lark Distillery is from waaaaaaaay south. In fact, if you try to go any further south you will end up in Antarctica. Lark Distillers is in Tasmania, the southernmost island state of Australia. Way back in 1992, Bill Lark was fishing with his in-laws while sipping a fine single malt Whisky … because that is what you should do, right? Anyway, he was enjoying a dram and looked around to see barley fields on one side and a large peat bog on the other. The rest is history. 
 
Lark Rum Cask Finish is their famous Tasmanian single malt Whisky, but after its initial aging they toss it into those Rum casks for a bit longer to squeeze out some flavour. The result is wonderful. The Rum casks mellow the Whisky even more and add a salted-caramel flavor that really matches up nicely, making the spirit richer and yummier.

Appearance / Color
Golden honey.   
 
Nose / Aroma / Smell
Firm peaches and apricots with earthy cedar wood and flowers.
 
Flavor / Taste / Palate
Salty caramel and sultanas with a hint of dark cocoa. 
 
Finish 
Sweet, eucalyptus, flowers, and a bit of smoke.

The rule also holds true for United States, so while there is no E in Scotland, Japan and Canada the same goes for their Whisky. All clear? Good.
The two biggest Whisky producers in Japan and major rivals are Nikka and Suntory.  
In the U.S., Irish Whiskey sales have jumped by over 500% since 2002. It’s the fastest growing category in the Spirits industry. There’s some news to raise your glass to.
When Stauning was being founded, the bank told them to open a bakery instead.
