When life gives you peaches, you distill the bejesus out of them.

Koval is the first small batch distillery in Chicago since the dark days of the prohibition era, and one of the leading craft distilleries in the US. It was founded in 2008 by Robert and Sonat Birnecker who abandoned their academic careers to follow their hearts. Growing up, Robert lived in Austria and was immersed in a culture of small batch distilling, so this might just have been destiny. The distillery supports sustainable agriculture and is certified as both organic and kosher — there’ll be no outsourcing for these dudes. In eight short years they have expanded their miracle-working to just about everything from Gin, to Whiskey, to Liqueurs, and a bunch of other fiddly things, all of them professionally crafted and tasty-good. Cast aside all doubts, for they are rated as one of the top ten small-batch distilleries in the US.

At this point you're probably wondering who presidential candidate Susan is. She's the late aunt of co-founder Sonat and was an artist through-and-through. True to her creative spirit, she at one time decided to campaign for President of the World — just as a gag, of course, having no real interest in politics and possessing a general dislike of bureaucracy. We think she succeeded in her own way and it must have been one peachy campaign, judging by this Peach Brandy, which was lovingly crafted in her memory. After the fresh peaches are distilled, the juice is aged in Koval's rye barrels for an added Whiskey kick. Peachy as well as spicy! Just what the doctor ordered

Brandy was invented in the 16th century by a sneaky Dutch merchant who learned how to remove water from Wine and save cargo space. He then added water again and called it “Bradwijn”, which means “burned wine”.
Brandies can help digestion, so they are perfect after meals. They were and are still are considered medicine.
Brandies can help digestion, so they are perfect after meals. They were and are still considered medicine. Basically, any fruit that can be fermented can be distilled and turned into Brandy.
Koval translates to "blacksmith," in numerous Eastern European languages, but the word in Yiddish can also mean "black sheep" (aka someone who marches to the beat of a their own drum, how apropos!)
Koval is Chicago’s first distillery since the 1800s.
Nevertheless, the best Brandies are required to preserve the concentrated flavor of the used fruit.
