A hoot of a Bourbon.
 
In the heart of the Kentucky Bourbon Trails is a state-of-the-art distillery that produces small batch Whiskey and loves owls. It was founded in 1879 by a local pharmacist, Charles M. Dedman, who received a huge lot by the Kentucky River by his father-in-law as a wedding gift. He started making fine Whiskey and life was good. Well, until the Prohibition started, and the Feds confiscated 250 thousand gallons of maturing hooch, worth $40 million in today’s money. Then, to make things worse, a mysterious fire destroyed what was left. Suspect No. 1 was Al Capone, but whatchagonnado? In any case, Dedman’s Whiskey was lost and forgotten until his great-great-grandson Dixon decided it’s high time Kentucky Owl returns.
 
More than century after Los Federales took Grampa Dedman’s Whiskey, a bottled homage is released – Confiscated Bourbon. 96.4 Proof, citrusy and fruity, it honors the legacy, resilience and old school Spirit makers. Oh, and darns those Feds. We think this intriguing sipper would make Papa Chuck really proud.

Jamie Hill and Mike McMahon continue the tradition of their families as third-generation horsemen, owning a bloodstock agency and a thoroughbred racing company. Applying that knowledge to Whiskey just made sense.

Limestone Branch Distillery, which produces Yellowstone Bourbon, also makes Minor Case Bourbon and Bowling & Burch Gin.

Bourbon Is a ''new barrel Spirit'': One of the legal requirements for Bourbon is that it only be aged in brand new oak charred barrels.
At any given time, there are more barrels of Bourbon in Kentucky than there are people. The population of the Bluegrass State is about 4.4 million. Today there are more than 5 million barrels of Bourbon sitting in the rick-houses of that Old Kentucky Home. That’s nearly 300 bottles of Bourbon per person, or about 60 gallons each.
Sure, Kentucky gets all the press when it comes to Bourbon. And with good reason—nearly 95% of it is produced there. But Bourbon can be made anywhere as long as it's within the United States. Just ask states with budding distilleries like Illinois and New York.
