A festive edition of Jawbox Small Batch Gin.

Belfast is an important port city and the capital of Northern Ireland that was built on industry and inventiveness. It’s a town worth seeing if you ever get the chance and, as every other town with a rich history, they’ve developed their own slang. A good example is the word jawbox that you’d hear often at a certain point in the past; it referred to a tenement sink every Belfast house used to have and where all the important convos would happen. The sink was boxy and jaws were dropping around it upon hearing all the juicy gossip, hence, the jawbox.

Jawbox Spirits are produced with a ton of patience for those who know how to savor every moment. Both the distillery and the fields, where the grain is grown, are located on a 300-acre country estate just outside of Belfast. The estate dates back to the 16th century and it’s there that the wizards at Jawbox take their sweet time to produce their premium Gin and Gin Liqueurs.

Jawbox Small Batch White Christmas Edition is a special festive edition of Jawbox Small Batch Gin, adorned with a white & silver label. This one, too, is crafted slowly from 11 carefully selected botanicals, including local black mountain heather from Belfast, cassia quills, grains of paradise, and cubebs. This classic dry Gin is triple-distilled in copper pot stills and most of the botanicals are “steeped-n-boiled” while three go through the vapor extraction method. Bottled at 86 proof, your giftee can sip this one neat or make impressive cocktails.

As producers try to develop new styles and flavors of Gin, to push the category and find a niche, the need for trying new methods of extracting flavors, as well as using more unusual botanicals, has grown.

One such way is the vacuum distillation method, when the redistillation of botanicals takes place in a vacuum.
Hardcore Gin lovers say the word Martini should never be preceded by Vodka, lobster, or pomegranate. They say the original and the only real Martini consists of Gin, Vermouth & olives, period!
Classifications of Gin: London Dry Gin, Plymouth Gin, Old Tom Gin, Genever or Dutch, New Western or new American or International style.
While juniper-heavy Gin is perfect for your daily G&T, it is also complemented extremely well by tea flavours such as Earl Grey. Try steeping Earl Grey tea bags in Gin for an hour before mixing it with lemon juice and soda for a refreshing tipple. This one gets you additional kudos, so let’s keep it between us.
How much Tonic is in a Gin & Tonic? The ideal proportions for a perfect Gin & Tonic is one part Gin and two parts Tonic.
Gin gets its dominant flavour from juniper berries. As with many other spirits, Gin was originally intended to be used as medicine. Yeah right!
