The Inchdairnie is a new eco-friendly distillery located on the outskirts of Kinglassie, in Fife. 

The site was built in 18 months, it opened in 2014 and production started in 2015. The distillery has a total of 2 stills. A mash filter is used, instead of a mash tun, to squeeze the sugary liquid from the thicker mash.

There are 4 washbacks in the distillery, and the ABV of the fermentated wort is 10%, which is higher than many other distilleries. They test thousands of variations of yeasts in order to find the perfect recipe.

There is also another Lomond still being tested, that will start working in summer 2016. Two types of spirits, namely Inchdairnie and Strathenry, are produced in the distillery. The location has 2 warehouses, each holding 44,000 casks

Inchdarnie will be using a seasonal distillation method, meaning they will distill a new line each season, and marry them to create a true vintage.

With the new Lomond still, Inchdarnie will be able to do triple distillation.

Their first single malt might be available in 2029.
Perching just above England, the Lowlands can play truant from peat or salinity. 

Triple distilled malts are characteristic of the Lowland region, offering a gentle, elegant palate reminiscent of grass, honeysuckle, cream, ginger, toffee, toast and cinnamon.

The Lowlands are master of the Whisky blend and are also known for their silent stills, which sadly no longer produce.
