Hibernia Distillers is fairly new, being founded in 2014 by brothers Conor and Alan Hyde in the wee town of Skibbereen, Ireland. But in a few short years this small-town maker of traditional Single Malt and Single Grain Irish Whiskey is rocking the world with products available in fifteen countries and an early, hard-won reputation for creating a line of seven amazing, aromatic, award-winning examples of liquid Irish pride.
Hyde No.4 6 YO Rum Finish has just about all the information you need right there in the name. A part of the core President’s Cask line up, it is a pure Single Malt Irish Whiskey aged fro six years in ex-Bourbon casks and finished in ex-Rum casks sourced from the Caribbean. This gem is bottled at a perfect 46% ABV without chill-filtration (as it should be). The result is a malty, pure Irish experience with the influence of exotic fruits and Tropical spices.

Irish Whiskey has many varieties: grain Whiskey, malted barley pot-still-distilled, and ‘pure pot-still’ (or ‘single pot still’ as it is now officially known). Then there is Poitin, one of the first Spirits ever made.
Nose / Aroma / Smell
The aroma is balanced with an interesting combination of toffee, passion fruit, plums, and Caribbean five-spice.
Flavor / Taste / Palate
The flavor profile sits on a steady foundation of vanilla, shortbread biscuits, and toffee that opens up with apricot, vanilla creams, and a touch of mango.
Finish
The finish is medium length with cinnamon, figs, and fresh-baked bread.
I’m glad I got try this. It is very skunked and has a strong taste. I had to use the flavor spiral for insight on it, and certainly I can taste the toffee. Needed a bit of water to open it up and lighten the boldness. I can see how this is a reserve for a select bunch. This is probably best drunk in dark library lit by a fireplace in an old leather chair surrounded by mahogany furniture and many leather bound books. I wish I was fancy enough to fully enjoy.

This has a lovely vanilla nose, but opens with a bitter tea flavor and ends with fire and a hint of allspice. There are other Irish whiskeys I love and other rum cask finished favorites. Something has gone very wrong here.

This is a real treat! I detected chocolate and vanilla on the nose. Sweet, earthy, fruity, spicy, and chocolate notes. Smooth, warming finish. Will definitely try this again.

What can I say... I do like a good rum cask finish whisky but not this this whiskey. It shows promise but it needs more age or something. I just cant get down with the flavor profile. Also the nose was immediately unpleasant to me at least. Sorry Hyde 6yo.. #notforme

I can taste the biscuit and toffee notes. This has a smooth, creamy finish. I’ve had a few other Hyde whiskeys before. My favorite is 6-year No.3, but this bottle is very good. This came in the Irish tasting box. This wouldn’t be my first choice when spending $70+ on a bottle, but so far, this Irish tasting box has been very good.
