Hillrock Estate is not just a pretty sight for sore eyes when it comes to distilleries but also prides itself on a rich 200-year-old history, with the testing times of Prohibition and naysayers—all of which have been successfully bridged by hard work and perseverance of a tightly-knit family business. Located in the picturesque Hudson Valley Highlands, the distillery overlooks quaint rolling barley fields and the distant Berkshire Mountains—a perfect place not just for a Whiskey lover but any aspiring photographer. The distillery makes hand-crafted Spirits using their own grain, malted floors and fine oak barrels. Power couple Jeffery Baker and Cathy Franklin, together with the legendary Master Distiller Dave Pickernell, have managed to crack the code of a successful Whiskey business. Their secret? Meticulous control of every aspect of their Whiskey production—from field to glass—and then sit back, relax and reap the benefits.

This American Whiskey is no regular tipple! Clocking in at 92.6 proof, Hillrock Pinot Noir Finish Solera Aged Bourbon Whiskey was aged in the Solera of Hillrock and Oloroso Sherry casks and then caressed with finesse in fine Shea Vineyard Willamette Valley Pinot Noir wine casks. The multi-barrel aging of this copper amber Whiskey shows off a burst of ripe fruit aromas—ripe cherries, blackberries and plums, and sweet desserts like taffy and crème brûlée. The palate has sweet toffee, vanilla notes, and a lingering rye spice finish. A genuinely decadent Whiskey, Hillrock Pinot Noir Finish Solera Aged Bourbon Whiskey is excellent to be offered with dessert or to wind down after a satisfying dinner.

Appearance / Color
Copper and amber with slight chestnut hues.

Nose / Aroma / Smell
Bright red fruit consisting of ripe cherries, blackberry and plums, sweet desserts like taffy, crème brûlée and creamy caramel.

Flavor / Taste / Palate
Vanilla and cherries, with sweet toffee notes and French oak, complimented by a fruity and floral flower arrangement.

Finish:
Lingering rye spice, dried plums, allspice, nutmeg and vanilla flavors.

Bourbons are very high in vanilla, as American White Oak is naturally high in vanillins.
At any given time, there are more barrels of Bourbon in Kentucky than there are people. The population of the Bluegrass State is about 4.4 million. Today there are more than 5 million barrels of Bourbon sitting in the rick-houses of that Old Kentucky Home. That’s nearly 300 bottles of Bourbon per person, or about 60 gallons each.
Straight Bourbon must be matured for at least 2 years. If a bottle has no age statement, it’s at least 4 years old.

Pinhook’s high-proof Bourbon won Gold at the 2019 San Francisco World Spirits Competition, while the Straight Rye Whiskey won Double Gold the following year. In 2021, their Bourbon War Vertical Series 5 Year and the 2021 Flagship Bourbon won a Gold Medal each, with a Double Gold going to their Tiz Rye Time Vertical Series 5 Year. Pinhook is evidently doing something right!

Speaking of breeding winner horses, two of Pinhook’s co-founders have horseracing in their DNA. Jamie Hill and Mike McMahon continue the tradition of their families as third-generation horsemen, owning a bloodstock agency and a thoroughbred racing company. Applying that knowledge to Whiskey just made sense.

Whisky or Whiskey? The spelling differs geographically. In Scotland, Japan, and some other parts of the world, distilleries usually spell it Whisky; in Ireland and the USA, they spell it Whiskey.
