The finest Japanese Sake, formulated and blended by a French master.

Launched in 2017, Heavensake is a line of blended Sakis with three fathers — Carl Hirschmann, Benjamin Eymère, and Etienne Russo. The products are assembled by the acclaimed French Wine-maker and cellar-master Regis Camus who collaborated with premier Sake-makers in Japan for production while deploying his world-famous palate in the selection of Spirits for each release. As of today, there are three variations — Junmai 12, Junmai Ginjo, and Junmai Daiginjo.

For Heavensake Junmai Daiginjo, Regis Camus collaborated with Sake-maker Dassai. It is made from 100% Yamadanishiki rice from the Yamagushi-ken Prefecture — Japan’s closest point to South Korea. The word “Junmai” means “pure,” and that means that Heavensake Junmai Daiginjo has no added sugars or alcohols, is natural sulphite and gluten free, has no additives, and is all natural.

Smartass corner: 
While most Western Spirits-makers use yeast to ferment Spirits, in Japan it is traditional to use Koji. Koji is actually a fungus used to ferment soy sauce and bean paste. And while many cheaper Saki and Shōchū products use yeast for fermentation, all high-end Japanese Spirits use Koji.
