If you’re a Sherry-head, you most likely know the González Byass Sherry bodega in Jerez de la Frontera. It was established in 1835 by Manuel Maria González Angel. Pretty soon, he was joined by his English agent Robert Byass, and business flourished. The González family was the biggest Sherry-making player in Spain, they were visited by the Spanish queen, and their La Concha Bodega was designed by Gustav Eiffel himself. In 1998, the Byass family withdrew, and the company is now 100% owned by the fourth and fifth generations of the González family. They produce incredible Sherry, including the cult classic Tío Pepe, while their used barrels are used for the second maturation of Scotch. Dalmore, for instance, finishes their 18YO Single Malt in 30YO González Byass Sherry barrels.
Soberano 12 is matured slowly in American oak through the traditional Solera fractional blending. That means when some of the batch is bottled, the barrels are refilled with new juice. The smooth and elegant Reserva Brandy is made from the airén grape variety and is bottled at 38% ABV. Sumptuous!
