It’s something I never would’ve expected. In fact, when I tasted it I couldn’t quite place what it was. It was an odd gustatory/olfactory disconnect. I knew it as a smell but I don’t know that I’ve ever tasted lavender. Once I looked at the flavor spiral (I never looked before a test) it made perfect sense. Unfortunately I can’t find it anywhere, even here! Travesty!

Nose is earthy, like freshly tilled soil, with honey and herbs behind. Flavors are lightly honeyed up front, with herbacious notes behind (if this were Scotch I'd describe them as 'heather-y.') Agave and earthy flavors rise up in the mid-palate, leading into a long smooth,, spicy-dry finish. Very well balanced and a true pleasure to sip.
