Uncle Flaviar loves local, unique, craft distillers, and Dry Fly out of Spokane, Washington, is after his own heart. Why? Because these guys are what a craft distiller is supposed to be. Where some small shops outsource everything, reducing their business model to that of repackaging and marketing operations, Dry Fly is anti-that. They control every aspect of the process; from sourcing 99% local ingredients from other neighborhood producers, to hand making everything else in their shop. They even hand-bottle all of their products on-site. Farm to bottle or grain to glass, as they say.

Dry Fly is the contrivance of Don Poffenroth and Kent Fleischmann, who set out to create Spirits that celebrate the beauty of their local surroundings, where the two love to fish in their spare time. Their product line includes Vodka, Gin, Bourbon and of course Whiskey. Not bad for a couple of former corporate marketing executives who combined forces to become the first licensed distillers in Washington since prohibition.

This is the golden age of small batch distilling craft operations, which means plenty of Whiskey and plenty of diversity all over the place. Despite that, wheat Whiskey is an entirely different kettle of fish. Dry Fly Washington Wheat Whiskey is a 100% Wheat Whiskey made in a small Cristian Karl Copper pot still and left to age for 3 years in American oak barrels. The dram carries plenty of punch and personality, but since we’re talking about wheat here, you can expect a nice smooth start, some sweetness and plenty of elegance as well.

Each bottle is handsealed with the note of the batch number and bottle number within the batch. The hilarious remarks on the bottle are there to keep you entertained whilst reminding you to restock the bottle before it’s too late. Fun and games aside, this is a tremendous Spirit whose reputation is only further underpinned by the huge amount of awards it’s winning. So, are you ready to take the bait?
