The
Dictador brand is produced at Destilería Colombiana, in
Cartagena,
Colombia; a distillery that has been in production for
over a hundred years.
The production process indicates they use a
syrup produced by boiling off the water from freshly pressed sugarcane juice, rather than molasses.
This syrup is fermented for
48-60 hours and then filtered readily for distillation. Distillation is carried using both
copper alembic (pot still) and
continuous column methods.
The main USP for the brand is that the rum is aged using a variation on a solera system.
So, whilst the main expressions are listed as ‘Aged 12 Years’ and ‘Aged 20 Years’, in reality, these are
average age statements.
The indication is that the cask management is skillfully worked to impart the different nuances in the flavor profile.
