If you happen upon a moniker like Defiant, you can bet your bottom dollar that you're in for a rebellious treat. And this distillery has chosen a formidable foe to defy: the barrels. Sure, it might sound like a strange adversary to pick, but we’re not complaining here. Their proprietary aging process is the real show stealer — instead of the traditional oak barrel route, they store their precious liquid in steel tanks with toasted oak spirals. Their distillery also sits atop a coveted aquifer in North Carolina's Blue Ridge Mountains, where the water is as pure as it gets, giving them a clear natural advantage in the distilling game.
The Defiant team isn't afraid to roll the dice, so it's no surprise that they decided to take on the daunting task of perfecting a 100% Rye Spirit. Rye is one fickle grain, but they didn’t even bat an eyelid — they fearlessly tackled the finicky ingredient and came out with an edgy, bold, and award stealing 92-proof Spirit. Using only the finest ingredients, including pure mountain spring water, specially cultivated yeast, malted rye, and toasted American white oak, they've created a rich, spicy, and velvety amber liquid with mesmerizing notes of honey, vanilla, caramel, and tannins.

Rye - think of it as Bourbon's edgier cousin. It’s known for what many call a spicy or fruity flavor. Rye (distilled from at least 51% Rye) is not on the sweet side and tends to have a spicier body. That’s why the character of a cocktail made from Rye, instead of Bourbon, is drier.
George Washington famously loved his Rye Whiskey. In fact, after he served as the first president of the United States, he returned to his farm at Mount Vernon and started a small Rye distillery of his own.
Rye sparked the first revolution after the American Independence. It was called the Whiskey Rebellion, and it arose when the government tried to tax Whiskey and enforce the taxation on distillers. The lesson here? Don't mess with a Whiskey drinker's dram.
