This is the Single Malt story of the year that you’ve been waiting for.

Daftmill is a teeny-tiny distillery by today’s standards. It’s a throwback to the era of farmhouse distilleries of the 1800s. The total annual capacity is just 20,000 liters. To put that into perspective, Glenlivet produces that much in half a day. Daftmill is the passion project of co-founder Francis Cuthbert. His family were tenants of the land near Fife, Scotland, before purchasing it from the Walker family in 1984. In 2005 they were granted a license to distill on their land. And they were VERY patient — issuing their first release in 2018 of those first distilled Spirits.

Daftmill 2006 Summer Batch Release Scotch Whisky is just the second release from this boutique distillery in the Lowlands. This twelve year-old Single Malt was pulled from just seven first-fill ex-Bourbon casks yielding only 1689 bottles in total — bottled at a perfect 46% ABV. All of the barley used to make this Spirit was farmed by Francis Cuthbert himself. It just does not get any more wonderfully authentic than this. Each bottle is wonderful and eminently collectible.

Appearance / Color
Harvest Gold

Nose / Aroma / Smell
The aroma is fragrant with notes of exotic herbs, stone fruits, warm sponge cake, and light baking spices.

Flavor / Taste / Palate
The palate builds upon the aromas with the addition of marmalade, lemon zest, marzipan, menthol, and honey.

Finish
The finish is medium length and lightly dry with notes of oak and dried apricot.

Beer and malt Whisky seem to have quite a bit in common. Both drinks begin with malted barley, which deliver the enzymes and sugars needed for fermentation when steeped in hot water. The two go their separate ways at the wash stage, where they're fermented or aged to become the adult beverages you know and love.
Scotch Whisky is seldom aged in new barrels. Bourbon and Tennessee Whiskey casks are usually used for maturation. In addition to that, Whisky is often matured or finished in various wine casks such as Sherry or Port.
Thus far all of their casks have come from Heavenhill Distillery in Kentucky.
Single Malt Scotch Whisky is made in Scotland using a pot still distillation process at a single distillery, with malted barley as the only grain ingredient. It must be matured in oak casks in Scotland for at least three years (most Single Malts are matured longer, though).
So for centuries this stream has been called "the daft burn" or "the crazy stream." This stream turned the waterwheel at the millhouse that was converted into the distillery, thus, Daftmill.
In the UK, the word "daft" means "crazy," So why "Daftmill?" Well, there is an optical illusion of the geography that makes the local stream look like it's flowing uphill.
