John Cumming was one of the rare Whisky smugglers that successfully transitioned to legal operation when the oppressive tax and production laws were eased. Thus, Cardhu was born in 1824. You may know Cardhu as one of the signature core malts of Johnnie Walker, but it was a Single Malt long before the blenders got their hands on it. Happily — after a few mis-steps — Diageo has restored it to its former delectable Single Malt glory where it is pleasing customers and winning awards once again.

Part of Diageo’s Special Release collection of 2021, Cardhu 14 Year Old 2021 Special Release tells the story of Cardhu distillery. It goes something like this: a golden liquid greets you with white grape, lychee, fruits, and meadow flowers aromas. Then, the palate sings a harmony of heather-honeyed sweetness, creamy smoothness and flavors of lush red berries. Finished in Wine-seasoned casks, this sirenic beauty is best enjoyed neat.

First-class Whiskies are taxed not only by the state but also by the angels. This refers to the 4% of Whisky that evaporates from the barrels every year, a phenomenon known as the angel’s share.
Scotch Whisky is seldom aged in new barrels. Bourbon and Tennessee Whiskey casks are usually used for maturation. In addition to that, Whisky is often matured or finished in various wine casks such as Sherry or Port.
Beer and malt Whisky seem to have quite a bit in common. Both drinks begin with malted barley, which deliver the enzymes and sugars needed for fermentation when steeped in hot water. The two go their separate ways at the wash stage, where they're fermented or aged to become the adult beverages you know and love.
