This is a hybrid experimental Whiskey from Buffalo Trace that combines the umami earthiness of Baijiu with the caramel and vanilla palate of aged American Whiskey.

Some argue, but since the original distillery building on this site dates from 1775, most folks consider the Buffalo Trace Distillery to be the oldest continually operating distillery in the US. It sits on the banks of the Ohio River in Frankfort, Kentucky, on the same 150 acres — completing 245 years of continuous operation. It even used the ”medicinal” loophole to operate during Prohibition. Now owned by Sazerac, it’s history includes a veritable Who’s-Who of historic Bourbon owners and Master Distillers who continue today to craft some of the finest and most popular Whiskey brands in America.

Buffalo Trace Baijiu is an experiment in applying modern, American distilling and aging techniques to a traditional, un-aged Spirit from China made from Sorghum and peas — Baijiu. Traditionally-made Baijiu gets all of its aroma and flavor from the fermentation process over several months where it develops substantial complexity. The Buffalo Trace version relies more on the aging process and wood contact. In this case it means aging for eleven years in a combination of virgin uncharred oak, toasted oak, and heavily charred oak with the final bottling being at 45% ABV.

This is a part of Buffalo Trace’s “Experimental Series” and it’s one worth trying for the adventurous.

Baijiu is technically the most popular Spirit in the world — although most people in Europe or North America have never heard of it. In Mandarin, the word “Baijiu” means “white Spirit.” It’s been made in China from one thousand years and can be made legally from many base grains, but the traditional one is sorghum.

Appearance / Color
Light Amber

Nose / Aroma / Smell
The aroma is half-way between traditional Baijiu and American-style Whiskey with funky, umami notes intermingling with caramel and vanilla.

Flavor / Taste / Palate
The palate builds upon the aromas with a kind of “candied mushroom” quality that we’ve never experienced before.

Finish
The finish is long, earthy, warm, and a bit sweet.
