Founded in 2013 by Keith and Steph Hadik, Black Fly is a product of Gristmill distillery. Nestled in the Adirondack mountains in New York, the rustic facility sources provincial ingredients for their handcrafted Whiskeys.

In 2007 New York State passed legislation that made distilling accessible to smaller businesses. Keith Van Sise decided to seize the day and got a license to operate a New York State Farm distillery.

Gristmill is quintessential Upstate New York. Rich in agricultural heritage, the area’s abundance of fresh mountain air inspired this first Spirit, a corn Whiskey named after the piton’s used by mountain climbers. A piton is a metal spike (usually steel) that is driven into a crack or seam during climbing, to prevent a fall.

Gristmill stresses the importance of local ingredients, using water sourced from a spring within a few paces of their facility. Their corn is grown by Adirondack Organic Grains in nearby Essex. And the Adirondack Park, is home to Gristmill Distillers, six million acres of protected land.

This black fly range is named for the black flies that inhabit the area. Ask any local and they’ll tell you, black flies are synonymous with the Adirondacks. Bottled at 40% ABV this White Whiskey is sweet on the nose, with a warm, subtle hint of straight-off-the-cob sweetness.

Bourbon rules refer to manufacturing methods rather than location. Bourbon must be matured in new and charred American white oak casks for at least 2 years. If the bottle has no age statement, the Bourbon is at least 4 years old. No coloring or flavoring of any type is allowed, and the mash bill must contain at least 51% corn.
is the fermentation process by which a percentage of a previous fermentation is added to a new batch as a "starter" to get the fermentation going and maintain a level of consistency from batch to batch. A sweet mash means that only fresh yeast is added to a new batch to start fermentation.
Rye Whiskey is made from mash that is at least 51 percent rye. The grain gives Rye Whiskey its spicy, sometimes peppery, and bitter flavor. It was a big seller before Prohibition, and after decades in obscurity, it’s fashionable again. Fun fact: George Washington distilled Rye Whiskey at Mount Vernon.
Tennessee Whiskey closely parallels Bourbon, but final filtering through sugar-maple charcoal (called the Lincoln County Process) is what some producers say differentiates them. Tennessee Whiskey’s finish is sweeter and smoother than Bourbon.
Corn Whiskey is a commercial product that must contain at least 80% corn, be distilled at less than 80% ABV (160 proof), and, if wood-aged, may be aged in either used or new un-charred barrels.
George Washington was a man of many talents being both a military braniac and the First President of the United States. Interestingly, he also became the largest Whiskey producer in the United States after leaving the politics.
