Jason Barrett’s family has been making elegant buttons for four generations and made sure suits and pants of presidents and popes stayed buttoned. But Jason wanted to pivot into something else that’s fine: Whiskey. His family taught him to work hard and don’t rush things, which comes in handy if you’re making Whiskey. He set up shop in Rochester, NY, when he was 24, and began concocting small-batch wonders in the first grain-to-glass distillery in Rochester since the Prohibition.

Black Button Single Barrel Apple Brandy Finished Bourbon is a sipper with a special finish. This lovely dram was first matured for 2 years in a single American white oak barrel. Then, it was finished for another 2 and a half years in an apple Brandy barrel. The result? A limited-edition bottle that clocks in at 119 proof and wreathes full-bodied flavors of ripe apples and honey, rounded up by mature oak and baking spices. Marvelous.

Sure, Kentucky gets all the press when it comes to Bourbon. And with good reason—nearly 95% of it is produced there. But Bourbon can be made anywhere as long as it's within the United States. Just ask states with budding distilleries like Illinois and New York.
Bourbon Is a ''new barrel Spirit'': One of the legal requirements for Bourbon is that it only be aged in brand new oak charred barrels.
Bourbon must be made from a grain mixture that is at least 51% corn.

Pinhooking means purchasing and rearing a foal based on its pedigree and either selling it or turning it into a champ racing horse. The same idea is behind Pinhook Bourbon: they source young Whiskey to mature and blend it into a blue-ribbon sipping Bourbon.
