A Straight Bourbon that’s been aged in a very special way.

Wood seems like a pretty important part of Whiskey making, right, but apparently, it doesn’t have to be. Or at least not in the way we’re used to, according to the co-founders of Silicon Valley-based Bespoken Spirits Stu Aaron and Martin Janousek who use technology to achieve perfection in Spirits. Their team of scientists developed a proprietary ACTivation technology, where "aroma, color, and taste" are extracted with "precision, control, and speed". This way, the Spirit is matured in days instead of years. Don’t worry, the process of instilling the barrel in the Spirit is completely natural and sustainable with no artificial colorings or additives. The profile of a Spirit is precisely tailored, which is great, but there are other benefits, too: "97% less wood consumption, 20% more Spirit yield (No angel’s share!), and most importantly, award-winning tastes."

Bespoken Spirits Straight Bourbon Whiskey begins with a 2YO bourbon mash bill of 75% corn, 21% rye, and 4% malt. It’s then craft-matured with their proprietary ACTivation process that uses new charred American oak staves. Just look at the beautiful golden brown color! The nose greets with aromas of marzipan, peanut butter candy, and pickled ginger root. The palate is very complex with flavors of sweet spice, mocha macaroons, and toasted pumpernickel bread. Neat, on the rocks, or in a tasty cocktail? Your call.

Pinhook’s high-proof Bourbon won Gold at the 2019 San Francisco World Spirits Competition, while the Straight Rye Whiskey won Double Gold the following year. In 2021, their Bourbon War Vertical Series 5 Year and the 2021 Flagship Bourbon won a Gold Medal each, with a Double Gold going to their Tiz Rye Time Vertical Series 5 Year. Pinhook is evidently doing something right!

Bourbon rules refer to manufacturing methods rather than location. Bourbon must be matured in new and charred American white oak casks for at least 2 years. If the bottle has no age statement, the Bourbon is at least 4 years old. No coloring or flavoring of any type is allowed, and the mash bill must contain at least 51% corn.

J.B.'s father, Joseph W. Dant, invented a still made from a poplar log at 16, as he couldn't afford a copper still. Although crude, it worked exceptionally well!

In November of 2015, MGP announced its first ever house brand — Metze’s Select Indiana Straight Whiskey. It is a blend of their high-Rye Bourbons, named after the Master Distiller who retired that year. It is not yet available on the market.
Whisky or Whiskey? The spelling differs geographically. In Scotland, Japan, and some other parts of the world, distilleries usually spell it Whisky; in Ireland and the USA, they spell it Whiskey.
