The Berneroys are masters of distillation and blending, and they have a keen eye for all the small things that are involved in the process of making their Calvados live up to its reputation. Berneroy Calvados XO is made from apple must (juice) of over 180 named apple varieties. This juice is then fermented for a minimum period of four weeks before being once distilled in an antique copper column. Single distillation makes the Berneroy Calvados fruitier and distinctly more aromatic than some of its counterparts. It is aged for up to 25 years in casks made of Limousin oak.
