Smooth as a criminal, cider, with baked apples, mild rancio and just a bit of vanilla in its range.

Finish
Round, oaky strong and long finish.

Comment
This is the Basis of the Le trou Normand (the Norman hole) tradition. Apparently it can reawaken the appetite between courses in a long meal. Just the thing we are fond of.

Le Trou Normand.

In the region of Normandy apples are pressed into cider, from which this distinctive Eau de Vie originates. The Berneroys are masters of distillation and blending, and they have a keen eye for all the small things that are involved in the process of making their Calvados live up to its reputation. It is Grande, Oui Grande, we tell you.

Berneroy Calvados XO is made from apple must (juice) of over 180 named apple varieties. This juice is then fermented for a minimum period of four weeks before being once distilled in an antique copper column. Single distillation makes the Berneroy Calvados fruitier and distinctly more aromatic than some of its counterparts. It is aged for up to 25 years in casks made of Limousin oak.
