When two Oregon legends band together, you know it's time for some serious Rock'n'Roll. As some of the best things in the world, the idea of this Whiskey-Beer venture bubbled to the surface over beer. Thanks to the liquid inspiration, Jim Bendis, founder of Bendistillery, and Gary Fish, founder of Deschutes Brewery, agreed on a business plan: Deschutes makes a Whiskey wash, and then sends it over to Bendistillery's Crater Lake to distill and age in new #4 char American oak barrels for three years. With both businesses having a relatively long and respectable track record—Deschutes has been around since 1988, and Crater Lake’s been kicking since 1996—the resulting liquid quickly gained a firm fanbase.

First released in 2016 as a limited run, Black Butte Whiskey is an American Malt Whiskey created from the wash (essentially wort without any hops) of Deschutes Brewery’s flagship beer, Black Butte Porter. The resulting Spirit is a balanced, yet complex Whiskey that retains the malty, chocolaty notes of the Porter, and finishes with the soft, nearly sweet, character. This 2019 edition, won Best of Show and Double Gold at the 2019 Sunset Magazine International Spirits Competition.

Dark chocolate, black forrest cake, cherries, roasted hazelnuts, and a hint of ripe fig.

Flavor / Taste / Palate
The aroma carries onto the palate, mixed with dark, ripe cherries, and espresso.

Long, woody finish, with a touch of brown-sugar sweetness.

George Washington was a man of many talents being both a military braniac and the First President of the United States. Interestingly, he also became the largest Whiskey producer in the United States after leaving the politics.
Bourbon rules refer to manufacturing methods rather than location. Bourbon must be matured in new and charred American white oak casks for at least 2 years. If the bottle has no age statement, the Bourbon is at least 4 years old. No coloring or flavoring of any type is allowed, and the mash bill must contain at least 51% corn.
Tennessee Whiskey closely parallels Bourbon, but final filtering through sugar-maple charcoal (called the Lincoln County Process) is what some producers say differentiates them. Tennessee Whiskey’s finish is sweeter and smoother than Bourbon.
An un-aged American Whisky is often called “white dog.”Sour Mash is the fermentation process by which a percentage of a previous fermentation is added to a new batch as a "starter" to get the fermentation going and maintain a level of consistency from batch to batch. A sweet mash means that only fresh yeast is added to a new batch to start fermentation.
Rye Whiskey is made from mash that is at least 51 percent rye. The grain gives Rye Whiskey its spicy, sometimes peppery, and bitter flavor. It was a big seller before Prohibition, and after decades in obscurity, it’s fashionable again. Fun fact: George Washington distilled Rye Whiskey at Mount Vernon.
Moonshine Whiskey is distilled from a varied mix of corn and sugar and is aged in Mason jars and jugs for the length of time it takes the customers to get home.
